And when it comes to the CSS, do you just specify "Helvetica" or "Helvetica Neue" (which seems to be the prefered version on the Mac). Is there any need to specify weights? Or can you even?

Something like:

Incidentally, I see Leopard is coming with fonts "such as"... "Tahoma", and "Microsoft Sans Serif". Will be interesting to see the full list.
